Milpa and the work before a meal

A kitchen begins in the field

UNESCO describes traditional Mexican cuisine as a system linking cultivation, preparation and community practices, with Michoacán as a paradigm. Reading a meal through this system prevents the plate from concealing the field. The milpa brings several crops and kinds of work into relation; cooking then adds further knowledge and labour. Set it beside the breakfast programme without equating their histories. A shared concern with feeding people does not erase land tenure, market pressures or differences between communities. This is a practice record, not a recipe presented as the voice of all Mexico.
